December 26, 2012Diamond Head Dreams – The Best Squares You Will Ever Eat!
I hope everyone had a very merry Christmas! It’s Boxing Day up here in Canada, which means shopping and eating leftovers.
I am probably making a pretty bold statement here, but I absolutely love these squares. I have no idea when this recipe dates from, but my mom has been making these during the holidays for as long as I can remember. They’re not quite as easy as Sara in AZ’s Devil’s Food Cake Cookies, but they are pretty easy, and like Sara, I promise to use vintage dishware! Let’s get started:
We’re going to start off by making the crust.
Cream your butter and sugar together, and then add the flour and salt. Mix until the mixture is crumbly. It should look like this:
Press it evenly into a 9″ x 13″ baking dish:
And that’s it for the crust! On to the topping:
We need eggs, brown sugar, flour, salt, vanilla, coconut and nuts. Not pictured: almond extract. I am not using it since I am using almonds as my nuts, but if you’re using a different nut, you might want to add it. Mix these ingredients all together.
These have a very tropical flavour to them, so they would be great to serve at a tiki-themed party – maybe for New Years?
Here’s the recipe:
1/2 cup butter
1/2 cup brown sugar
1/2 tsp salt
1 cup flour
Cream butter and sugar. Add flour and salt, mix until crumbly. Press into 9″ x 13″ pan. Bake at 350 F for 12-15 mins, until golden
3 eggs, well beaten
1 cup brown sugar
2 tbsp flour
1/2 tsp salt
1 tsp vanilla
1/4 tsp almond extract
1 1/2 c coconut
1/2 c chopped nuts
Mix together and spread on baked crust. Return to the oven, bake for 20-25 mins until a toothpick comes out clean. Cool, cut into bars.
